In the town of Solsona, Spain, the tradition of knife-making dates back to the sixteenth century. The Pallarès company is now the last knife-making workshop in the town. For over a century, Pallarès has sought the highest quality materials to craft the best cutting edge, sharpening every knife by hand. This knife will last a lifetime with proper care and sharpening.
Carbon steel is harder than stainless steel and will hold its edge longer before needing to be sharpened. However, carbon steel requires more care than stainless steel. It is natural for carbon steel to develop a patina over time. Always keep the knife dry, as carbon steel will rust if it remains wet. Use a blade oil to keep it sharp and reduce the likelihood of rust.

I HAVE ALWAYS BEEN A HUGE FAN OF CARBON STEEL KITCHEN/COOKING/PARING KNIVES. THIS ONE IS A NO NONSENSE SUCH KNIFE. I AM AWARE OF THE SPECIAL NEEDS OF CARBON STEEL KNIVES BUT I FIND IT GOOD THAT SUCH WARNNGS ARE PUBLISHED WITH THE KNIFE DESCRIPTION.

I bought 2 of these knives for paring/utility use. They arrived sharp, and I keep them sharp with a diamond steel. Treat carbon steel right and it will reward you with an edge like no other steel. Wash and dry thoroughly after each use and rub a little knife oil on the blade before storing. The steel will develop a rust-resistant patina and the knife will become an heirloom.
Finding a high quality, long-lasting kitchen knife has become harder and harder. This single knife replaces 2 of my low quality kitchen knives.
